There are places where you eat fish, and then there is El Tormentín. Here the Cantabrian comes through the door every morning, straight from the fish market, and reaches the table treated with the respect owed to anything the sea gives up so reluctantly.
The dining room smells of the harbour and the day writes the menu: what came in is offered; what didn't, is not invented. That is how it works in the temples.
